Heirloom Tomato Salsa

The heirloom tomato is the special ingredient in this homemade salsa, with a unique flavor. Plus, these tomatoes may actually have more phytonutrients than the more common varieties.
Serves 6 

Ingredients:
3 heirloom tomatoes, chopped
¼ c red onion, minced
¼ c Anaheim pepper, minced
1 T garlic powder
½ tsp cumin, ground
2 T fresh cilantro, minced
½ lemon, juiced

Mix all ingredients in a food processor. If using a blender: 1) make sure to pulse the mixture, not blend, and 2) break from pulsing to stir tomatoes, which will help give them an even consistency.    

Guacamole

This guacamole offers a simple green richness to the sweet potato tacos. Without added salt, the avocado flavor can truly be appreciated.
Serves 6 

Ingredients:
3 avocados
1 lemon, juiced
2 tsp garlic powder
¼ c red onion, diced
2 Roma tomatoes, chopped

Slice avocados in half and scoop out flesh into a food processor. Add lemon juice and garlic powder, and red onion. Pulse a couple times to mix ingredients. Then add tomatoes and pulse a few more times. It should be a creamy consistency, but also have some pieces of avocado and tomatoes in tact.  If using blender, follow directions above.

Onion Cashew Cream

This creamy topping is the perfect substitute for sour cream. Serve chilled on the warm tacos and it will give a wonderful hot-cold sensation.
Makes 2.5 cups 

Ingredients:
2/3 c water
1/2 T apple cider vinegar
1/2 T lemon juice
2 c cashews
1/2 onion, chopped

In a sauté pan, sweat the onions over medium heat. Mix all other ingredients in a high-powered blender. When onions are translucent blend them in with everything until you have a smooth consistency. Dish out the cream and store it in the refrigerator until it's time to add it to the taco bar. This also makes a great dip for cut veggies or baked tortillas.
