Four Fruit Cookies

As a child, the holiday season was always filled with Grandma’s infamous “Christmas rocks.” These cookies seemed to look a little like rocks, but they were sweet, chewy, and had the perfect spice. Of course, this was my first recipe to transform into one that is full of nutrients and SOS-free. This is still my favorite cookie, but now it’s sweetness is health-promoting!
Makes 2½ dozen cookies

            Ingredients:
            3 c oat flour or 3¾ c rolled oats
1 tsp cinnamon, ground
½ tsp nutmeg, ground
½ tsp cloves, ground
1 tsp baking powder
¾ c water, warm
3 T flaxseed, ground
1 banana
3/4 c apple sauce, no added sugar
1¼  c strawberry jam, no added sugar
8 dates, pitted & chopped
¾ c pecan pieces

Preheat oven to 375 degrees. Mix flour, spices, and baking powder into a bowl and set aside. 
In either a blender or with a hand-held blender combine water, ground flaxseed, banana, and apple sauce. Once it has a smooth consistency stir in the strawberry jam.
Pour the dry ingredients into the bowl containing the fruit mixture. Whisk until everything is evenly mixed. Then stir in the dates and pecans. Mixture should be slightly wet, don’t expect to shape cookies into balls. To thicken the batter before forming balls, cover the dough and put it in the refrigerator for 15 minutes.
Lay parchment paper on cookie sheets. Drop spoonfuls of dough onto parchment paper. Bake at 375 degrees for about 15-20 minutes.
